Traversetolese Artisan Parmigiano Reggiano, aged for 24 months, is an exceptional Italian cheese, often referred to as “White Gold” for its unique pale, creamy interior and superior quality. Produced by Caseificio La Traversetolese in the village of Traversetolo, Parma, Italy, this PDO (Protected Designation of Origin) cheese is crafted in a small, artisan dairy with a limited production of approximately 19,000 wheels per year The milk comes from cows fed a diet of local mountain grasses, naturally dried hay, and flaxseed, resulting in a cheese higher in Omega-3 oils, which enhances its creamy texture and consistent flavor even after extended aging. Each wheel is stamped with the town’s symbol, a winged goddess, signifying its authenticity. Aged for a minimum of 24 months in traditional cellars, its flavor is rich yet subtle, with nutty, sweet, and slightly fruity notes, significantly less salty than other Parmigiano varieties, making it a standout for its balanced taste.
